Whisky and treacle ribs

These are one of Barfields finest creations. We take fresh pork belly and cure it in a mixture of salt, whisky and treacle. After 7 days in the cure we then marinade the meat in a mixture of apple juice and treacle before cutting into ribs. Slow roast for a couple of hours and get stuck in!
