Can't decide which bird to have why not have 3! A pheasant, a chicken and a goose fully boned-out then layered with our cumberland sausage meat, and the tied back up to resemble a goose. This makes for one hell of a centrepiece. Easy to carve and pure indulgence! Feeds 12 to 15 people.
